Healthy Meals To Eat On The Road - Dinner

Fresh Spinach Salad 


Ingredients:
•    ½ cup Walnuts or Pecans (or toasted walnuts or toasted pecans)
•    1 Balsamic Dressing (or dressing of choice) 
•    1 apple
•    1 ripe pear (or strawberries) 
•    3 cups baby spinach leaves
•    3 cups baby mixed greens

Instructions:
1.    Wash your spinach and mixed greens.
2.    Core the apple and pear, and cut them into thin slices.
3.    Place the greens in a bowl and top with apples, pears, and walnuts. Pour over the dressing and enjoy. 

Bonus: Enjoy a healthy cup of Greek Yogurt for dessert.
