Healthy Meals To Eat On The Road - Breakfast

Breakfast: Hearty On-the-Road Overnight Oats

Ingredients:

1/2 cup old-fashioned rolled oats

1 cup unsweetened regular almond milk

1 tbsp chia seeds

2 tbsp slivered almonds

2 tbsp dried cherries

2 tbsp dried shredded coconut 

*Bonus - the fruit of your choice 

 

Instructions:

  1. Layer your dried ingredients in the bottom of a mason jar.
  2. Add almond milk until the ingredients are completely covered. Put the lid on the jar and shake vigorously to combine the ingredients.
  3. Leave in the refrigerator or cooler overnight, or at least 2 hours while the chia seeds and oatmeal absorb the almond milk. Enjoy straight from the jar with a spoon.
